Coffee and Walnut Cake
Ingredients
2 bananas
300 g ground walnuts
160 g spelt flour
70 ml Mövenpick “Der Himmlische»
60 ml milk alternative
6 tbsp maple syrup
3 tbsp coconut oil
2 tbsp ground linseeds
6 tbsp water
3 ½ tsp baking powder
½ tsp salt
½ vanilla powder
50 g roughly chopped walnuts
3 tbsp coconut sugar
Preparation
- Pre-heat the oven to approx. 180 °C and line a long tin (approx. 23 cm) with baking paper.
- In a bowl, mix the linseeds with the water to form a paste and leave to stand for 6-8 minutes until the mixture has a thicker consistency.
- Mix spelt flour, ground walnuts, baking powder, vanilla powder and salt together in a bowl.
- In a second bowl, mix the milk alternative, coffee, coconut oil, maple syrup and the mashed bananas together.
- Then add the linseed mixture and continue to stir.
- Then add to the mixture of flour, walnuts and baking powder and mix until you end up with a dough.
- Now spread the dough evenly in the tin and sprinkle the remaining walnuts and coconut sugar over the surface.
- Bake in the oven at 180 °C for around 60 minutes. Check with a skewer when removing from the oven to see if the cake is done.
- Leave to cool and then, best of all, enjoy with a cup of coffee!
