Coffee and Walnut Cake

Ingredients
2 bananas
300 g ground walnuts
160 g spelt flour
70 ml Mövenpick “Der Himmlische»
60 ml milk alternative
6 tbsp maple syrup
3 tbsp coconut oil
2 tbsp ground linseeds
6 tbsp water
3 ½ tsp baking powder
½ tsp salt
½ vanilla powder
50 g roughly chopped walnuts
3 tbsp coconut sugar

 

Preparation

  1. Pre-heat the oven to approx. 180 °C and line a long tin (approx. 23 cm) with baking paper.
  2. In a bowl, mix the linseeds with the water to form a paste and leave to stand for 6-8 minutes until the mixture has a thicker consistency.
  3. Mix spelt flour, ground walnuts, baking powder, vanilla powder and salt together in a bowl.
  4. In a second bowl, mix the milk alternative, coffee, coconut oil, maple syrup and the mashed bananas together.
  5. Then add the linseed mixture and continue to stir.
  6. Then add to the mixture of flour, walnuts and baking powder and mix until you end up with a dough.
  7. Now spread the dough evenly in the tin and sprinkle the remaining walnuts and coconut sugar over the surface.
  8. Bake in the oven at 180 °C for around 60 minutes. Check with a skewer when removing from the oven to see if the cake is done.
  9. Leave to cool and then, best of all, enjoy with a cup of coffee!
